Our approach to staffing is the same as our meals. We believe in the philosophy of “less is more”. Fewer staff = more attention and better service = simpler management = more satisfied customers.
Our Head Waiter – Liva – was one of our initial recruits when we opened Bistro Tatau in 2002. He had not had any previous hospitality experience and was trained at our own in-house training school prior to opening the restaurant. Pati is one of our other waiters who also graduated from our training school and has been with us on and off since we opened. We also have several part time waiters who we call on from time to time. Come in and say “Talofa”.
Our Head Chef – Alex – was recruited from New Zealand in 2010 where he had completed formal studies in hospitality and worked in several high-end cafes and restaurants. Born in Samoa, his family moved to New Zealand for education when he was very young. We are very fortunate to have Alex return and share his skills with us. Junior started in the kitchen as a washer-upper but quickly showed skills as a kitchen hand. That was over 12 years ago and he is not only still with us but has honed his skills in all aspects of cooking in a fast paced restaurant.
Owners
Bistro Tatau is owned by the directors of Tatau Limited a locally registered company in Samoa. The company is owned by two Australians who have been coming to Samoa since 1975 and who settled in Samoa in 1999.
Tips and Gratuities
Tipping is not customary in Samoa although it is becoming more common practice. The policy at Bistro Tatau is that the delivery of food, wine and service is a collective effort. We believe the guy out the back washing your glasses is just as important as the waiter presenting your food. If you have enjoyed your meal and wish to acknowledge the fine service by way of a gratuity, these will be shared equally between the floor and kitchen staff. Rest assured the tips are greatly appreciated.
